Ingredients
- Onion - 1
- Tomato Puree - 2 tbsp
- Garlic - 1
- Water - 1 cup
- Moong Dal - 1/2 cup
- Lemon Juice - 2 tsp
- Carrot - 1/2
- Salt - as per taste
- Black Pepper - 1/4 tsp
- (Optional) Soy Sauce - 1 tbsp
- Oil - 1/2 tsp
- Coriander leaves - 1tbsp
Recipe
- This recipe creates 1-2 servings of lentil soup.
- Heat up a pan and add a small amount of oil to them, let the oil splutter.
- Add chopped onions and chopped garlic to pan and cook until golden brown on medium flame.
- Parallely, soak the Moong Dal in water and keep them aside for
- 25-30 mins.
- Add the tomato puree to the pan and stir for about 2-3 minutes.
- Now, add chopped carrot and cook for another 2-3 minutes.
- Drain the water out of the lentils and add them to the pan along with water, salt, black pepper and (optional) soy sauce.
- Mix well and then let it cook it for about 40-45 minutes on medium flame, or until the lentils are soft.
- Scoop out the mixture and blend in a high-speed blender until the soup thickens.
- Now return the blended soup to the pan and cook it for 5-10 mins until you get the required consistency.
- Adjust the seasoning and top it off with some lemon juice.
- Finally, garnish it with coriander leaves and serve it hot.
